Finnish Pancakes with a Flourish!

Finnish Pancakes - Saturday Morning Breakfasts - Flapjacks - Easy Breakfast

I love pancakes! I just don't like to fix them! It's not the process of fixing them, it's just that the process comes so early in the morning! This recipe is from my friend, Janna. Janna is a Finn with a wicked sense of humor and a wonderful smile. She often made these wonderful pancakes for her daughter's friends and reveled in the fact that she was the most popular mom in the neighborhood when she made them on Saturday morning!

JANNA'S FINNISH PANCAKES

1 tsp of Salt
3 tsp of Sugar
2 eggs
1 1/2 cups of Flour
3 cups of whole Milk
Oil (just pour into batter) not too much

Mix all ingredients with an electric mixer till well mixed. Pour some oil into frying pan and heat till hot. Pour a small amount of batter into pan and let fry for till you see bubbles on the surface. Turn over and let brown on the other side.

Makes about 4 servings.

Serve with any of your favorite jams and sour cream or fresh fruit (whipped cream can also be used), or sprinkle with sugar and enjoy. When I let slip that I enjoyed them with syrup, Janna was horrified and muttered something about those @#$% Americans! So if you enjoy a bit of the maple, don't tell the Finns!
