The Musical Fruit
One of my father's favorite meals was always beans and cornbread. Simple to make and cheap to buy! And when I married my husband a year and a half ago, I discovered one of his favorite meals was - you guessed it! - beans and cornbread! So in honor of my two favorite men, I am putting forth the following recipe:
Beans Cooked In a CrockPot
1 lb Beans - pink or pinto
12 cups Hot water
1/2 cup onion, roughly sliced
2 T. Lard (yes, Lard!)
1 tsp. salt, or to taste
1 T. chopped cilantro
Rinse the beans and remove any debris. Add the beans into the crockpot and cover with the hot water. Add the onion and lard and bring to a boil.
Add the salt and cilantro and simmer for another 30 minutes.
This dish is best eaten the next day with cornbread or fresh tortillas. There should be plenty of delicious liquid to sop up!
And that's all there is to it! Make a big pot for your family (but I will let you in on a little secret - add a bit of baking soda to the pot - it will prevent the beans from becoming "the musical fruit!")
